Okay, so last night I was craving some mango salsa (and no I am not going to have a baby…. 🙂 I have made mango salsa in the past, but of course  can not find the recipe when I want it. So, after a quick check on the internet…I came up with my version! OH so good.

The muffins in the picture are breakfast muffins I made a few weeks ago and froze.(The recipe for those to follow)

Ingredients:

1 Mango, diced
1 large red onion, diced
1-2 tomatoes, diced
Salt, pepper to taste
Cilantro, fresh if you have it
Garlic powder( i know, you might not think works, but…just try it)
