FINALLY……….as most of you probably have heard in the news, Germany is expierencing a SUMMER for the history books. It all started on April 08th, 2018(the day of my first half marathon!) BOB (the Big ole Ball of Sunshine) came out and basically set up camp. We have been enjoying my kind of weather….hot hot and then some more hot. ANd that my friends is the main reason why I have been AWOL.. I keep thinking the good weather will leave soon and then I will have all the time in the world, but it looks like that is not happening, so here I am finally getting back to my beloved Blog… and to reboot things right, I want to share with you some ice cream recipes I have been trying out here at home.
The Marvelous Medley of Ice Cream
In order from left to right: Pineapple – Lemon Curd – Watermelon
Where to start? We love all three flavors. Today I would like to share with you the recipe for Watermelon Sherbert. I found it at : Baked by Rachel
So, a big shout out to Rachel for this great recipe!
Ingredients:
2 cups pure watermelon juice, chilled
1 1/2 cup heavy cream
3/4 cup granulated sugar
pinch of salt
1/2 cup mini chocolate chips
Directions:
- In a large bowl, combine chilled pure watermelon juice with sugar and salt, stirring to dissolve the sugar, stir in heavy cream. Churn according to manufature´s directions. In the last 10 minutes of churning, slowly add mini chocolate chips.
- Transfer mixture to a freezer safe container, Freeze until solid
Now for my Tip on how to get that Watermelon Juice without going insane. Simply drill a large hole in the watermelon, take your hand mixer and mix away! Within minutes you have watermelon juice. I promise the next time I make watermelon sherbert I will be sure to make a video of how to do it!
My ice cream maker of choice is the kitchen aid attachment…..although I have the feeling the Cuisinart Ice Cream Machine is in my future!
