My girlfriend Jeanne found an awesome recipe for apple pie on the website: allrecipes.com. I decided to try it this past weekend for my moms 80th birthday party. It was awesome—did not look perfect, but tasted good! I guess that is what counts, right? I love allrecipes.com—always find good things there. And now there is allrecipes.de!!! Yea. I may have lots and lots of cookbooks, but I when in doubt I always check my favorite cooking website for inspiration.
1 recipe pastry for a 9 inch double crust
pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/2 cup white sugar
|
1/2 cup packed brown sugar
1/4 cup water
8 Granny Smith apples – peeled, cored
and sliced
|
1. | Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes. |
2. | Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. |
3. | Bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes. |

I got so many rave reviews for this pie on Thanksgiving! A first for me and Apple pie.
If you try this recipe I would suggest the following:
1. Have all the other elements ready before making the brown sugar syrup (bottom crust with apples and top crust ready to go)
2. Use brown sugar mixture while it is still "syrupy" – if you let it sit too long on heat it gets too thick (almost like a toffee) to work with.
3. If you don't like lattice top (like me) I took 3/4 of brown sugar syrup and poured it over apples.
4. Brush remaining syrup over the crust
Be careful – it is hot – and you need to work fast!
Enjoy – it is worth the work.
