As many of you already know, I am slowly starting a in house catering business and so last weekend my family and I joined forces in the our kitchen to try out various recipes. The following recipe was found in the magazine Cooking for 2. Enjoy!
Recipe
Savory Stuffed Mushrooms
6 large fresh mushrooms
4-1/2 tsp finely chopped onion
4-1/2 tsp finely chopped green pepper
1 Tablespoon butter
1/8 tsp salt
1/8 tsp pepper
3/4 cup cubed day-old bread
Dash cayenne pepper
Remove stems from mushrooms and finely chop; set caps aside. In a skillet, saute the stems, green pepper and onion in butter until tender. Remove from the heat. Stir in the bread cubes, salt, pepper and cayenne.
Stuff into mushroom caps. Place in a baking dish coated with nonstick c cooking spray. Bake, uncovered at 350° for 15 minutes or until stuffing is lightly browned.

LOVE stuffed mushrooms! Seriously, love love love them. This looks like a fabulous and easy recipe too – that much easier for me to be able to make and eat them! haha
How cool that you're starting a catering business! That's really exciting!

that looks delicious! I am learning to like stuffed mushrooms; they've not always been a favorite of mine. I'd love it if you'd link them up to my new Tuesday linky-Made From Scratch Tuesday!
